  • 1 tablespoon coconut oil

  • 2 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 2/3 cup Sunwarrior Coconut Milk powder
  • 2 cups water
  • 2 cups chopped vegetables (such as carrots, potatoes, and bell peppers)
  • Fresh cilantro, for garnish


  1. In a large pot, heat the coconut oil over medium heat. Add the onion and cook until translucent, about 5 minutes.
  2. Add the garlic and ginger and cook for another 2 minutes.
  3. Add the curry powder, turmeric, cumin, coriander, paprika, and salt, and stir to combine.
  4. Add the vegetable broth, chickpeas, diced tomatoes, coconut milk powder (mixed with water), and chopped vegetables to the pot.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes, or until the vegetables are tender.
  6. Serve hot, garnished with fresh cilantro.
