Tangerine Strawberry Superfood Creamsicle

Ingredients:

  • 2 cups coconut milk
  • 1¾ cup tangerine wedges
  • About an inch of tangerine peel
  • 1½ tablespoons lakanto
  • 2 teaspoons lucuma powder
  • Pinch sea salt
  • 1 tablespoon Warrior Blend vanilla protein
  • Your favorite berries, sliced (J-Wro uses strawberries)

Directions:

Now you need a whole lot more sweetness, but we’re doing this without added sugars. Lakanto is a natural, zero calorie sweetener from monk fruit. Next, take a tip from the Peruvians and add lucuma to your ice cream dishes. This subtropical superfood adds a nice sweetness too. Sea salt then rounds out all the flavors and helps bring the sweetness to the forefront of your taste buds.

Let’s make this dessert functional with the benefit of extra protein with a dash of Sunwarrior vanilla protein (J-Wro likes Warrior Blend or Classic Plus). This protein also adds a little more creaminess and sweetness to the mix. Blend away.

Toss in your favorite, most any will work well with the creamy tangerine, but cut those bad boys into manageable pieces beforehand. Push them down with a chopstick, toothpick, or skewer.

Top each mold off with more creamsicle goodness, and then they go in the freezer for several hours. When they’re ready, run them under warm water to loosen them up and then take them to the face.

You are going to love the creamy tangerine flavor of these creamsicles and you will probably have to make more soon, cause they’ll be flying out of your freezer. It’s hot out and only getting hotter, so cool off with something fantastic, cool, sweet, low on the glycemic index, and as good for you as it is flavorful. Enjoy.
