Superfood Peanut Butter and Jelly Sandwich

Get ready for another of Jason Wrobel's delicious recipes! This time he's bringing back lunchtime and recess with this PB&J sandwich.

Jason Wrobel, celebrity chef, recipe mix-master, and hilarious tv personality, is back in the kitchen where he’s applying his swanky, vegan style to another delicious kid friendly recipe. This week he tackles homemade PB & J that’s perfect for your children or perhaps to satisfy the inner child you barely contain each day.

Don’t worry, this peanut butter and jelly will be more than just a couple slices of bread with the accompanying spreads. You should know better by now that J-Wro likes to give things his own creative touch. We’ll start by making the nut butter, one you may be just a little unfamiliar with. Have no fear though, Jason will walk you through it.

J-Wro starts with jungle peanuts. These purple and brown beauties will make one pretty peanut butter, but use the peanuts you have access to if you can’t find these fancies.

Superfood Peanut Butter and Jelly Sandwich

Ingredients:

Peanut Butter:

  • 1 cup peanuts
  • 2 tablespoons coconut palm sugar
  • ¼ teaspoon sea salt
  • 1/8 teaspoon ground cinnamon
  • ½ tablespoon Classic Plus vanilla protein
  • Optional: 1 teaspoon coconut oil (if butter is too dry)

Strawberry Chia Jelly

  • 1 and ½ cups strawberries
  • 1 tablespoon fresh squeezed lemon juice
  • 3 tablespoons coconut palm sugar
  • 1/8 teaspoon sea salt
  • 2 tablespoons chia seeds

Directions:

jason_wrobel_peanut_butter_jelly_sandwich_pbj_homemade_picPour the peanuts in the blender jar. Add some sweetness with coconut palm sugar and some sea salt to help draw out the sweetness. Cinnamon gives your peanut butter a hint of something more and a touch of sweet flavor too. Bump up the protein and the sweet vanilla flavor even more with Classic Plus. It’s creamy, delicious, and sweet without adding sugar.

Get loud in your kitchen and blend that jar up. It helps if you have a blender with a twisty scraper installed, but you can stop and wipe down the sides with a spatula now and again too. Add a little coconut oil if it isn’t getting smooth enough for your taste.

Move on to the jelly or jam. This one uses fresh strawberries that go into your blender with lemon juice, coconut palm sugar, and a pinch of sea salt.

Blend it to your likeness, chunky or smooth.

Pour the jelly into a bowl.

jason_wrobel_peanut_butter_jelly_sandwich_pbj_picChia joins the party after the blend to thicken it up and give it that jelly consistency. Whisk it in well and put it in the fridge for about an hour or so to let those chia seeds go to work soaking up the moisture and getting all gooey up in there.

Now assemble the sandwich. Lay down your layers on your favorite healthy bread, cut it up how you like, and head off to your happy place with one delicious lunch or snack. Enjoy!
