Spinach Pear Salad with Maple-Cinnamon Vinaigrette
Makes 4 to 6 servings Prep time: 15 minutes This is a quick and simple salad that tastes wonderfully gourmet.
6 cups baby spinach, packed 1 cup pecans, coarsely chopped 1/2 cup cranberries or raisins 1 small shallot, sliced thinly 2 pears, sliced thinly Place all ingredients except pears in a large bowl and set aside.
1/2 cup olive oil 3 tablespoons balsamic vinegar 3 tablespoons maple syrup 1/4 teaspoon cinnamon 1/4 teaspoon salt Whisk all ingredients in a bowl. Pour over salad and toss gently.
