Mushrooms with Spinach Sauté
Ingredients (serves 2-4):
- 3 tablespoons olive oil
- 3 ½ cups cremini mushrooms
- 1 teaspoon Sunwarrior Turkey Tail Mushroom powder
- 1 medium onion
- 3 cloves garlic
- 2 cups fresh spinach
- 1 lemon (for juice and zest)
- 1 can of chickpeas
- 1 teaspoon ground cumin
- 1 teaspoon Sunwarrior Turmeric powder
- Salt and pepper to taste
Directions
- Place a large pan on medium heat and put in the olive oil.
- Finely chop the onion and place it in the pan. Fry for 3 minutes and stir occasionally.
