My friends call me the pancake queen, and for good reason. They’re one of the staple foods in my diet. What I love about pancakes is they’re so versatile. What about nutrition, you ask? What I’ve done is created my own recipe which is healthy for you. For my after the gym or after yoga pancakes I like to opt for a higher protein as opposed to a carbohydrate. So here’s my high protein, healthy pancake recipe:
Ingredients:
- 1 scoop Sunwarrior protein powder
- 8 egg whites
- 1 teaspoon coconut oil
- 1 teaspoon coconut butter
- ¼ banana
- ¼ cup strawberries, sliced
- ¼ cup raspberries
- ¼ cup blackberries
- ¼ cup blueberries
Directions:
Separate the egg whites from the yolk. Blend egg whites, banana, and protein powder until combined. Add a little water if the batter is too thick. Oil griddle or pan with coconut oil. (For each pancake, re-oil the pan.) Pour pancake mixture on heated pan. Pancake will be ready to flip when edges get golden. After flipping, cook for another minute or two until golden brown.
Plate pancake and top with coconut butter and fruit, with a drizzle of maple syrup if you like.
