Vibrant Beetroot Hummus

  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 3 tablespoons tahini
  • 3 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon Sunwarrior Beetroot Powder
  • ½ teaspoon ground cumin
  • ½ teaspoon Sunwarrior Sea Salt

Optional toppings: extra-virgin olive oil, sesame seeds, fresh herbs

  1. In a food processor, combine the chickpeas, tahini, lemon juice, minced garlic, olive oil, beetroot powder, cumin, and salt. Blend the mixture until smooth and creamy. If needed, scrape down the sides of the processor and blend again to ensure everything is well combined.
  2. Taste the hummus and adjust the seasoning to your liking. Add more salt, lemon juice, or beetroot powder if desired.
  3. Transfer the beetroot hummus to a serving dish. You can drizzle some extra-virgin olive oil on top and sprinkle with sesame seeds or fresh herbs for garnish.
  4. Serve the beetroot hummus with pita bread, tortilla chips, fresh vegetables, or as a spread on sandwiches and wraps. It's a vibrant and nutritious dip that will add a pop of color to any appetizer spread or snack time. Any leftovers can be stored in an airtight container in the refrigerator for up to 5 days.
