Vegan Christmas Sugar Cookies with Beet Powder Red Icing
Ingredients:
- ½ cup vegan butter, softened
- ¾ cup granulated sugar
- ¼ cup unsweetened plant-based milk (e.g., almond, soy, or oat)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Line baking sheets with parchment paper.
- In a large mixing bowl, beat the vegan butter and sugar together until light and fluffy.
- Mix in the plant-based milk and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.
- Lightly flour your surface and rolling pin. Roll out the dough to about 1/4 inch thick.
- Use holiday cookie cutters to cut out shapes and place them on the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Once completely cool, decorate with icing (recipes below) and sprinkles for a festive touch.
Red Icing
- 1 ½ cups powdered sugar
- 2 tablespoons almond milk
- 1 teaspoon vanilla
- 2 teaspoons Sunwarrior Organic Beetroot powder (can deepen shade by adding more a little at a time)
- 2-3 teaspoons light corn syrup to make the icing shiny (optional)
To make these cute little Christmas santa hats, make two batches of icing leaving one plain white and adding the beetroot to the other.
If you want to get a little extra cute you can turn this into little Christmas gnomes by adding a nose between the white frosting and the red. For the nose, roll several small balls of cookie dough, bake for 3-5 minutes. then place the ball on top of the iced cookie.
