Veggie Burrito with Fresh Guacamole| Vegan Recipe by Jeff Culligan
2 ripe avocados, diced
1 teaspoon fresh kosher salt
1 teaspoon cumin
1 teaspoon onion powder
½ jalapeño pepper (optional)
Large spoonful of onion, finely diced
¼ cup Vegenaise
1 tablespoon cilantro, chopped
1 lime, juiced
1 teaspoon olive oil
½ cup onion, diced
1 cup potato, diced and blanched
1 cup mushrooms, sliced
Pinch Kosher salt
Wheat and whole grain tortilla
Vegetarian refried beans
Brown rice, long grain
Stir all ingredients, except cilantro and lime juice, together until fairly smooth. Add cilantro and lime juice. Stir.
Heat olive oil in pan.
dd onion, it should sizzle when you put it in the pan.
Add potatoes and cook until potatoes are slightly brown and onions start to caramelize, remembering to stir.
Add mushrooms and salt.
Cook until potatoes are brown.
Layer refried beans, brown rice, and some of the potato mixture you cooked on tortilla.
Add your choice of fillers: tomatoes, olives, greens, etc.
Top with guacamole.
Add any sides you want to your plate and enjoy!
