Mango Lemon Pepper Pasta Salad

In this hilarious, informative and entertaining vegan recipe video, celebrity chef and Cooking Channel TV host Jason Wrobel rings in the New Year this 2015 with a cleansing pasta salad that’s as amazing as a 90s ballad. Yep, it’s that good, and it will work well with any resolutions you’ve got cooking.

Mango Lemon Pepper Pasta Salad

Ingredients:

Dressing:

  • ¼ cup filtered water
  • Juice of 1 lemon
  • 1 ½ tablespoons Ume vinegar
  • ½ cup mango, diced
  • ¼ cup organic tahini
  • 2 cloves garlic
  • ¼ teaspoon black pepper, reserve some for plating
  • 1 cap Sunwarrior Liquid Light
  • 2 cups kelp noodles

Directions:

Blend all the dressing ingredients for a few seconds until smooth. Put kelp noodles in a large bowl, add the dressing, and mix it all up nice. Put a bed of watercress on your plate and add the noodles and sauce in the middle. Top with some diced and cured black olives for a delicious flavor, some extra protein, and an awesome color contrast. And finish off with the reserved pepper. Now that it’s ready, put it to the face!

Feel free to mix things up and make the recipe work for you and your ingredients. Try rice noodles and spinach or spiralized zucchini noodles and young dandelion leaves. Kale, arugula, gluten free noodles, whole grain noodles, make it your own!
