This Berry Baked Oatmeal is a celebration of comfort and color, perfect for family brunches, or anytime you want to bring a little extra joy to the breakfast table. With steel-cut oats, juicy berries, and a hint of vanilla, every bite feels like comfort.

Berry Baked Oatmeal

SERVES: 8-10

Ingredients:

  • ½ cup (1 stick) vegan butter, plus more for greasing the baking dish
  • 2 cups steel-cut oats
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional, or swap for cardamom for a twist)
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 2 tablespoons maple syrup
  • 1 scoop Sunwarrior Organic Super Reds powder
  • 5 cups boiling water
  • ½ cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups mixed red berries (raspberries, strawberries, cranberries; fresh or frozen)
  • Optional: 1 small apple, chopped, for extra texture

Instructions:

  1. Preheat oven to 375°F and place rack in the center. Butter a 9x13-inch baking dish.
  2. In a large pot, melt the butter. Stir in the steel-cut oats and toast over medium heat for 3–5 minutes until fragrant.
  3. Add the cinnamon, nutmeg (or cardamom), baking powder, salt, and Sunwarrior Reds powder. Stir well for another minute to evenly distribute the reds powder.
  4. Mix in the maple syrup.
  5. Carefully pour in the boiling water, stirring to combine. Stir in the coconut cream and vanilla extract.
  6. Pour the oatmeal mixture into the prepared baking dish. Gently fold in the red berries (and apple, if using). The berries will mostly stay near the surface as it bakes.
  7. Bake for 50–60 minutes or until the oatmeal is set but still tender in the center.
  8. Let cool for 15 minutes before serving.
