Vegan Cranberry Chocolate Chip Oatmeal Cookie with Prebiotic Fiber
Ingredients
- 1 cup rolled oats
- ¾ cup flour
- 1 ½ teaspoon baking powder
- 2 teaspoons cinnamon
- 1 scoop Sunwarrior Prebiotic Fiber
- 2 tablespoons apple sauce
- 1 teaspoon vanilla extract
- ½ cup maple syrup
- 1 chia egg (Mix 1 tablespoon Sunwarrior Chia Seeds and 2 and a half tablespoons water)
- ½ cup dried cranberries
- ¼ cup chocolate chips
Directions
- Prepare chia egg and set aside for 8-10 minutes
- In large mixing bowl, mix together oats, flour, baking powder, cinnamon, and Prebiotic Powder
- In separate bowl, apple sauce, vanilla, maple syrup, and chia egg
- Add wet ingredients to dry ingredients and mix without overmixing
- Fold in cranberries and chocolate chips
- Chill the dough for thirty minutes
- Line a baking sheet with parchment paper and preheat oven to 350
- Place rounded cookie balls onto the parchment paper and flatten slightly
- Bake for 10-12 minutes
