Whip It Good: Vegan Peanut Butter Mousse

Dessert should taste great, but a truly magnificent dessert should be healthy, too. We offer the magnificent with this vegan peanut butter mousse!

Typically, a mousse-style dessert is made with animal-based fats: cream cheese, heavy cream, whipped cream—but it doesn’t take any of that to whisk up this fluffy treat. Vegan Peanut Butter Mousse is equally “cream”-y and arguably even more delicious than its traditional counterpart.

Avocado stands in for the “cream” in this recipe, while maple syrup sweetens the mixture up. Notice we’re using vanilla powder for our mousse, although you can also use a traditional vanilla extract—just increase the measurement to a full teaspoon of extract. Vanilla powder is simply ground vanilla beans, and it’s a good substitute when baking, as it packs the punch of vanilla flavor without being diluted by the alcohol of the extracted version. A word to the wise: be sure to check your powder well before buying—often, manufacturers sneak in powdered sugar or synthetic extracts, two things you’d be better off avoiding!

For variation, try trading the peanut butter powder for cacao powder for a delicious chocolate mousse. Or better yet, make both recipes and serve layered in a parfait glass for a creamy peanut butter cup dessert.
