I was fortunate enough to be a server at a high-end Asian fusion restaurant when I became a vegan over six years ago. I quickly discovered that many of my favorite wok fried dishes were inherently plant-based, besides of course the meat, fish, and egg ingredients. To my amazement, simply removing these items and substituting tofu or extra veggies led to many simple and satisfying vegan meals. I credit this experience with laying the foundation for my path, teaching me that living a plant-based lifestyle is not as hard as it sounds. In fact, it’s a breeze!
As it turns out, a lot of Asian cuisines are easy to recreate at home, especially those of the wok fried variety. After much experimentation, I have crafted a simple recipe for delicious fried rice with a Thai inspired peanut butter sauce. I’ve decided to nickname it “The Crowd Pleaser,” due to the overwhelmingly positive feedback upon sharing with several co-workers during a lunch break. The Crowd Pleaser is a hearty, healthy and versatile entrée, so feel free to serve it as the main course, or as an awesome side dish to other foods.
