Vegan Superfood Stuffed Peppers

Want to blow your guests away at your next house party or event? Serve them up these beautiful and colorful peppers stuffed with foods that are good for them, but they’ll only remember how delicious they were.

Ingredients:

  • 3 red, yellow, or orange bell peppers, halved and deseeded
  • 1 cup quinoa
  • 1 cup corn
  • 1 zucchini, diced
  • 1 crooked-neck yellow squash, diced
  • 3 roma tomatoes, diced
  • 1 (8oz) bpa-free can tomato sauce
  • 1 (12oz) bpa-free can black beans
  • 1 clove garlic, minced
  • 2 teaspoons green onions, minced
  • 1 tablespoon olive oil
  • 2 teaspoons paprika
  • 2 teaspoons Italian seasonings
  • Salt, to taste
  • Coconut oil
  • 1 cup vegan cheese

Directions:

Preheat oven to 350 degrees Fahrenheit.

Cook the quinoa according to the directions on the package.

Meanwhile sauté the green onions, zucchini, yellow squash, and garlic with a little olive oil and a dash of salt over medium heat until the onion is tender and translucent.

In a large bowl combine the quinoa, corn, squash mixture, black beans, tomato sauce, and seasonings. Stir until mixed.

Coat a 10 by 15 inch lasagna pan with coconut oil and place the pepper inside facing upward like cups. Lightly sprinkle them with salt and then spoon the mixture into them. Bake for 20 to 25 minutes.

Sprinkle with vegan cheese and bake another 5 minutes until cheese browns slightly. Serve and enjoy.

Tip – Try grilling the peppers instead to bring out a different flavor.
