Vegan Peanut Brittle

Some of the best holiday recipes come from the counter bring filled with all kinds of cookies, chocolates and brittle. Packing them away into festive holiday tins would be one of my favorite things to do during this time. Holidays will come and go, but this recipe will be a winner all year around! This super delicious and easy to make peanut brittle will be a fan favorite with family, friends, and loved ones. Sometimes people get deterred from making brittle or candy themselves because they think it’s a whole complicated ordeal; the truth is, it’s very simple to make and takes hardly any time to prepare!

The best part about this recipe is that you can swap out the peanuts for any type of nuts desired. If you have a peanut allergy or just prefer almonds, cashews, seeds, or even quinoa, this is your time to be creative! You can also add chocolate to your peanut brittle to add an extra flavor boost. This recipe can be stored in the refrigerator and can last up to two months in a sealed container (if it lasts that long!).

If you don’t want to purchase a candy thermometer or do not have one, there is a simple trick for knowing that your brittle is finished. Simply put a bowl of ice water near the stove near the boiling syrup. When the syrup begins to turn a golden brown, drop a small amount into the cold water. If the brittle hardens as soon as it hits the water, it’s done! I have used this trick many times when I have misplaced my thermometer. If you’re heading to any New Year’s parties, this is a great treat to bring along!
