Vegan Oatmeal Cranberry Muffins

Quick and easy breakfasts are what we need in the morning, especially when it's a busy morning. More often than not I’m running out the door to work or getting kids off to school and no time for breakfast. It’s very convenient to have a breakfast already made that you can pull out in the morning and let it sit until you are ready for breakfast or heat them in a toaster oven. These muffins fit the bill.

These muffins are filled with goodness. Oats are very filling and can actually lower your LDL cholesterol over time. They also are a good source of fiber and protein. Oats also have iron, manganese, and zinc. The cranberries offer antioxidants and anti-inflammatory benefits. They also have vitamin C, E, and K.


Vegan Oatmeal Cranberry Muffins

  • 1 cup unsweetened applesauce
  • 2 flax eggs*
  • ¼–1/3 cup maple syrup
  • ¼–? cup coconut sugar
  • ¾ cup almond milk
  • 3 tablespoons coconut oil, melted
  • 2 teaspoons real vanilla
  • 2 ½ cups old-fashioned oats (1 ½ cups ground, 1 cup whole)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups whole cranberries, pulsed in a food processor
  • Whole oats, optional
  • Coconut sugar, optional


  1. Mix applesauce, flax eggs, maple syrup, coconut sugar, and almond milk in large bowl. Add coconut oil and vanilla. Mix well. In a separate bowl combine oats, baking powder, baking soda, salt, and cinnamon.
  2. Pour wet ingredients into dry ingredients. Mix until just combined. Mix in cranberries.
  3. Divide batter into 12 muffins tins. Sprinkle with oats and coconut sugar, if desired. Bake at 350 degrees for 20–25 minutes.

*Flax eggs: mix 1 tablespoon ground flax seed with 2 ½ tablespoons water. Let sit for 5 minutes. Use in place of one egg.
