Vegan Lentil Salad with Grapefruit & Cumin Vinaigrette

The fresh flavors of Grapefruit and Cumin with hearty lentils, sweet pomegranates, and crunchy radishes makes this colorful dish another easy favorite. The vinaigrette is savory and tart with just a touch of spice. Cumin is the real star of this recipe as it offers a Latin-inspired pop of flavor to this vegan-friendly salad, as well as, a host of overall health benefits!

Vegan Lentil Salad with Grapefruit & Cumin Vinaigrette

Prep Time
INGREDIENTS
Salad Ingredients:
- 2 cups green lentils, cooked
- ¼ cup pomegranates
- 4–6 small radishes, sliced
- 2 tablespoons green onion, chopped
- ? cup fresh cilantro, chopped
Vinaigrette:
- ¼ cup grapefruit juice
- 1 teaspoon grapefruit zest
- ½ teaspoon cumin seeds
- ½ teaspoon cumin powder
- 4 tablespoons olive oil
- ? teaspoon cayenne
- Pepper
- Salt
DIRECTIONS
Toast the cumin seeds by placing them in the olive oil over medium heat until they are golden and aromatic. Set aside until the oil and seeds cool. Combine the remaining vinaigrette ingredients in a large mixing bowl and whisk the cooled olive oil in until completely combined and emulsified. Give it a taste, and salt and pepper as needed!
Next, place all of the salad ingredients into the mixing bowl and toss with a large spoon until completely combined.
Health benefits of cumin:
The essential oils from the cumin seed are what really bring health to the table. The aroma of cumin alone (an organic compound called cuminaldyhyde) activates your body’s saliva glands to prepare your body for food digestion. While other compounds like thymol and carminative release acids and bile to aid in the breakdown of your food and prevent any gas or bloating. This recipe can be doubled for a larger serving or side dish.
