Vegan Gluten Free Salted Caramel Waffles

Caramel sauce:

  • ¼ cup coconut milk
  • ½ cup coconut nectar
  • 2 teaspoons yacon syrup
  • ¼ teaspoon vanilla extract
  • 2 teaspoons mesquite powder
  • ½ teaspoon sea salt
  • 1/8 teaspoon ground cardamom
  • Squeeze Immune Shield
  • 1 cup raw macadamia nuts

Waffle mix:

  • 1 cup premixed gluten free pancake/waffle mix
  • wafffle_homemade_strawberries_banana_sauce_caramel_pic1 tablespoon ground golden flaxseeds
  • 1 teaspoon ground cinnamon
  • 1 cup coconut milk
  • 1 tablespoon coconut nectar
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

  • Vegan chocolate chips
  • Sliced strawberries
  • Sliced banana
  • Shredded coconut

Add all your caramel sauce to a blender and blend until smooth. Set aside

Add the three dry waffle mix ingredients to a large mixing bowl and whisk together. Then add wet ingredients of waffle mix to the dry and mix it all together, making sure to mash up any lumps as much as possible.

Lightly oil waffle maker with a bit of coconut oil. Pour waffle mix onto griddle until brown.

Plate up the waffle and top with vegan chocolate chips, strawberries, banana, shredded coconut, and, of course, the salted caramel sauce. Now dig in and try not to faint from the deliciousness!
