Vegan Cream of Your Favorite Veggie Soup




There are lots of cream-of soup options, but whichever is your favorite, we’ve got you covered with this great vegan cream of your favorite vegetable soup!

cream of soup_picThis soup is enjoyed both cooked or raw, warm or cold. The hemp seeds make it high in anti-inflammatory protein. The avocado makes it super creamy without any dairy. The onion, garlic, cumin, (and optional herbs) help to boost the immune system. And the nutritional yeast gives it a cheesy, vegan flavor that also has plant protein in it. Vegan Cream of Your Favorite Veggie Soup

INGREDIENTS

  • 2 cups of fave chopped veggie
  • 3/4 cup hemp seeds
  • 1/3 cup onion
  • 1 clove garlic
  • 1 teaspoon sea salt
  • 1 avocado
  • 1 tablespoon raw coconut oil
  • 1 tablespoon nutritional yeast
  • 1/4 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 3 cups water

DIRECTIONS

Directions for hot soup: cream of soup 2_pic

Steam veggie of choice until soft. (Time depends on the hardness of the veggie. It can be anywhere from 10–30 minutes).

Blend water and hemp seeds till nice and creamy in blender. Then add steamed veggie and re-blend until creamy. Finally, add the rest of the ingredients until super smooth. Enjoy as is. Or heat up on low heat if you prefer it a little warmer. Top with black pepper, nuts, seeds, or sprouts on top.

Directions for raw soup:

If you want to do this completely raw, no need to steam the veggies (even the squash, believe it or not! You just need a high powered blender for this.)

I prefer slightly steaming the veggies during the colder months, as it is nice to have something a little warm. It also makes it a much creamier soup that is easier to blend.

*Optional Flavor Variations:

Add a different herb to change up the flavor. Follow the same instructions above and additionally add 1/2–1 teaspoon of your herb of choice.
