Vegan Chocolate Peanut Butter Cups, Naturally
Ditch the saturated fat, sugar, GMO's, and artificial flavors and colors with this amazing recipe for creating your own delicious, healthy, vegan Peanut Butter Cups! They take minutes to prepare, kids love them, and for peanut allergies, you can sub the peanut butter for any other nut or seed butter! These make the perfect Halloween treat too!
Ingredients:
¼ cup natural organic coconut butter (*option: coconut oil)
¼ cup raw cacao powder
10–20 drops vanilla crème stevia
1 tablespoon BPA organic pumpkin puree (optional)
1 ½ tablespoons natural organic crunchy peanut butter
Method:
Mix coconut butter and cacao powder in double boiler pot and bring to a boil. Once melted, add stevia and stir. Pour chocolate into muffin pan till about half full, then stick pan into freezer for 5–7 minutes until the chocolate is set. Add spoonful of nut butter to the solid chocolate base in muffin pan then pour more chocolate on top till level with the top of the pan. Put back in freezer for another 5–7 minutes. When solid, pop them out of the muffin pan and serve. If you’re saving them for later, store in the freezer. Enjoy!
