Vegan Apple Pecan Pie

This pie is very light and healthy. It has no refined sugar and can easily be done gluten-free. It is also very quick and easy to make but most of all it is super delicious, and I bet it will be all be gone on the day you make it!

INGREDIENTS

Base

  • ¾ cup oat flour (use GF oats if making GF version)
  • ½ cup ground almonds
  • 4 tablespoons coconut oil, melted
  • 5 tablespoons maple syrup
  • a pinch of salt

Apple Filling

  • 7–8 cups apples suitable for cooking
  • 2 teaspoons ground cinnamon
  • 3 tablespoons maple syrup
  • 2 tablespoons coconut sugar
  • juice squeezed from 1 lemon
  • 1 tablespoon coconut oil

Pecan Topping

  • 1 cup pecans
  • 1 tablespoon coconut sugar
  • 3 tablespoons maple syrup
  • a pinch of salt
  • 1 tablespoon coconut oil

DIRECTIONS

  1. Preheat the oven to 350°. Lay a bottom of a 9-inch round cake tin with greaseproof paper and set aside.
  2. To make the base, place all ingredients in a big bowl and mix until dough forms; it should have the consistency of wet sand. Place the dough in the prepared cake tin and mold it to the bottom and to the sides of the tin so that it’s at least 1.5 inches tall. Spike the dough with a fork; place in the oven and bake for 10 min. Take out of the oven and set aside.
  3. While the base is baking, prepare the apples. Peel and core them and then chop into small cubes. Place a large pan over medium heat and put the apples in, then add the rest of the ingredients for the apple filling and cook for 10 min stirring occasionally.
  4. While the apples are cooking, prepare the pecan layer. Place a pan over medium heat and put the nuts in. Leave them in the pan over heat for about 5 minutes occasionally stirring so they don’t burn. Add the rest of the ingredients and cook for 3 more minutes.
  5. Place the apples evenly on top of the pre-baked base and top them with the pecans. Lower the oven temperature to  350 degrees and put the pie in the oven. Bake for 20-25 min until the pecans turn golden-brown. Serve hot or cold, both taste great!
