Tomato Basil Sweet Potato Toast

The best thing since sliced bread! No really! Since many people have celiac disease or going gluten-free for digestive reasons, we bring you sweet potato toast!

Someone came up with a better way to enjoy our toast, and, boy, is it delicious! Sweet potato toast has been all the rage these days. There are so many ways to make it; the possibilities are endless! This is a classic sweet potato toast recipe that I enjoy a few times a week.


Tomato Basil Sweet Potato Toast

  • 1 sweet potato sliced
  • Basil leaves
  • 1 large tomato
  • 1 small avocado
  • Himalayan sea salt to taste
  • Black pepper to taste 


Take the sweet potato and slice it up thin. Slice how many “toast” pieces you want to have. I can eat 2–3 for a snack. Put the sweet potato slice in the toaster twice for best results. You can do three times depending on your toaster temperature. I put mine on medium, so I don’t burn it. While your sweet potato is toasting, slice tomatoes and avocado. Wash basil and get it ready to layer on top of sweet potato. When sweet potato is done, put on a plate and top with avocado first. Smash avocado on the toast with a fork. Then add basil slices, so they stick to the avocado. Then add tomato slices on top of basil. Crack some Himalayan sea salt and pepper on top to taste. Enjoy the flavors as they melt in your mouth!

Their rich orange color indicates that they are high in carotenoids like beta-carotene and other carotenoids, which is the precursor to vitamin A in your body. Carotenoids help strengthen our eyesight and boost our immunity to disease; they are powerful antioxidants that help ward off cancer and protect against the effects of aging. They are high in Vitamin D which is great for strong bones. They also help regulate blood sugars.
