Tofu Mushroom Stir Fry

Looking for something quick and healthy? With the warmer months ahead, this tasty, tofu mushroom stir-fry is just the recipe for you. Serve it with brown rice for a complete meal, or serve alone and skip the carbs if you want for a lighter dish. Serves 4.


Tofu Mushroom Stir Fry

  • ½ package natural pressed tofu, thinly sliced
  • 6 celery hearts, cut on diagonal
  • 5 fresh baby shiitake mushrooms, sliced
  • ½ cup dried wood ear mushroom, soaked until rehydrated and chopped
  • 2 garlic cloves, minced
  • 1 ½ tablespoons soy sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon olive oil
  • 2 tablespoons water
  • Salt and pepper to taste


1. On medium heat warm olive oil and garlic in a large skillet or wok.

2. Once the garlic is warmed, add celery, tofu, and mushroom. Cook under celery is softened. This just takes a couple of minutes.

3. Turn heat to low. Add soy sauce, cornstarch and a couple of tablespoons of water in a small bowl. Mix until combined. Add to vegetable mixture and still until incorporated, adding a small amount of additional water if necessary. This mixture creates a gentle glaze and adds additional flavor.  Salt and pepper to taste. Serve over brown rice if desired.
