Sweet Potato Guacamole Sliders
Ingredients
Guacamole:
- 2 Large Hass Avocados
- 2 tomatoes diced
- 1 Clove Garlic
- 1 Red Onion
- 1 Jalapeno
- 1 Lime
- Pinch of Sunwarrior Sea Salt
- Fresh Cilantro
Sweet Potatoes:
- 3 Large Sweet Potatoes
- 2 Tbsp. olive oil
- Sunwarrior Sea Salt and pepper to taste
Directions
- Preheat oven to 400F. Wash and slice sweet potatoes into ½ inch thick rounds.
- Toss sweet potatoes in a bowl with olive oil, sea salt, and fresh ground pepper. Spread out of a baking sheet lined with parchment paper.
- Bake for 10-15 minutes, then flip sides and cook for another 10-15 minutes.
- While sweet potatoes are baking, prepare guacamole. Mash all of the ingredients together until thoroughly combined.
- Once sweet potatoes are removed from the oven and cooled, place a spoonful of guacamole on each slider, garnish, and enjoy!
