Zoodles is the new thing. At least, it’s new to me. I love it! Zoodles are zucchini cut into noodles. They are a fantastic substitute for regular noodles especially if you need to lower your carb intake. I personally love zoodles and can tell a small difference from regular noodles but not that big of a difference. My kids didn’t really know it was zoodles that I made. All they knew was that it was different.
Zucchini is a win-win vegetable. It’s low in calories and high in antioxidants. Zucchini is loaded with vitamin C and B6. It’s also good for your heart. Carrots are high in vitamin A and is also a high source of antioxidants. Carrots have beta carotene, lutein, and zeaxanthin that boost your eye health. Broccoli is high in Vitamin K, C, and A. It also is high in antioxidants.
