Southwest Salad

Feeding a large family healthy vegan or vegetarian meals they want to eat is a challenge. But it can be done! We'll show you how with this Southwest salad!

Salad is a delicious, light, and easy dinner that you can have on the table in less then 30 minutes. It’s filled with all the yummy things you love to eat, but the really great thing about this salad is you probably already have most of the ingredients you need in your fridge or pantry.

Black beans are an excellent filler that support your digestive track and have key nutrients such as fiber and folate. The sunflower seeds are an antioxidant and are chuck full of vitamin E. Avocados are a tasty source of healthy fat that lowers your risk of heart disease and essential vitamin E nutrients. The sweet corn is another wonderful antioxidant and add just the right amount of sweetness.

Southwest Salad

  • 1 head romaine lettuce, chopped
  • 1 can organic sweet corn, drained or 1 cup frozen corn, thawed
  • 1 red bell pepper, chopped
  • 1 cup cherry or grape tomatoes, cut in half
  • 1 (15 oz.) can organic black beans, rinsed and drained
  • 1/3 cup roasted and unsalted sunflower kernels

Creamy Avocado Salsa Dressing

  • 1 small avocado, peeled and sliced
  • 1 small jalapeno, seeded, deveined and roughly chopped (optional)
  • 1 clove garlic, peeled
  • ¼ cup loosely packed cilantro
  • ¼ cup salsa (medium for more of a kick)
  • ½ cup non-dairy sour cream
  • 2 tablespoons olive oil
  • ½ teaspoon agave nectar
  • Juice from 1 lime
  • ¼ teaspoon salt
  • ¼ teaspoon cumin
  • 1/8 teaspoon pepper


Make the dressing first and chill, if possible, before serving.

For dressing

Add all ingredients to a food processor or blender and mix well. Add additional non-dairy sour cream, if needed, to reach desired consistency. Chill.

For the salad

Add all salad ingredients into a large bowl and toss. Pour in dressing and toss again.

Serve immediately.

*If you aren’t going to eat the salad all at once, add dressing to individual servings.
