This recipe is an easy one for less stress on your plate to leave your guests in awe and tummy-full.
Avocados are a great snack; they’re healthy and natural and they have some great benefits. Avocado, also known as the butter fruit, is high in fiber, protein, and healthy fats. They’re packed with amazing antioxidants and anti-bacterial components, contain 20 different vitamins and minerals, and are high in vitamins K, C, E, and B6, folate, and protein. They are also great for your skin and hair and they help in stimulating your brain cells. Stuffing this yummy fruit with spicy herbed veggies makes this not only a perfect snack, but also nutritious, filling, and a proven fact that snacking can be healthy and delicious.
The herbed veggies are a simple blend of sweet, savory, and spicy ingredients that aren’t too overwhelming, but complement the fatty, yummy avocado. The combination of turmeric, garlic, and sesame butter packs this snack with healthy nutrients, cancer-fighting components, and anti-inflammatory and anti-bacterial properties. They’re also a great way to add some health to your snacking pantry. This mixed with tangy sun dried tomatoes and hydrating cucumber and alkalizing lemon juice makes it the perfect sweet, sour, spicy, fat, and crispy snack.
Avocado Stuffed with Herbed Veggies
Serving size: 1–2 // Prep time: 15 minutes
Ingredients:
- 4 ripe avocados
Herbed Veggies:
- 1 cucumber, minced
- 1 shallot, diced
- 3 tablespoons sun-dried tomato powder
- 1/2 teaspoon Himalayan sea salt
- 1 tablespoon garlic powder
- 1/2 teaspoon turmeric powder
- 1 tablespoon coconut palm sugar
- 2 tablespoons tahini
- 2 tablespoons lemon juice
Garnish:
- 1 teaspoon cayenne
- 1 teaspoon dried dill
What do you do?
Cut the avocados in half and remove the pits. You can use an ice cream scoop to create larger scoops in the avocado if need be.
To make the herbed veggies, mix all ingredients in a bowl and toss them delicately.
To assemble, use a small spoon, scoop out some herbed veggies, and neatly place them in the center of the avocado. Make sure you don’t allow the center to overflow and just keep them nice and intact.
You can leave the shells of the avocado as a natural bowl for serving if you like. If not, you can remove the shell and serve in a small bowl or cut up as a side to a meal. Garnish with cayenne and dried dill. Enjoy!
