Roasted Artichokes

A sit-down family dinner fosters growth and communication. Roasted artichokes offer that leisurely dinner atmosphere and adds to it great taste and amazing nutrition.

I grew up eating artichokes at the time when they were not as popular as they are today. It was always interesting eating them in front of people who had no clue what they were and watching their reactions. My siblings and I always fought over the last roasted artichoke on the plate. Eating and savoring artichokes was a serious thing in my family. And just when I wasn’t watching, my brother took the heart of that artichoke right out of my hands. All that hard work of peeling and eating each petal one by one just to get to the center to enjoy that delicious heart was gone. I got good at protecting the treasured heart.

Little did we know how nutritionally valuable this amazing floral green vegetable was. Artichokes are packed with antioxidants and phytonutrients. They are especially high in Vitamin C, magnesium, iron, and fiber. Artichokes are said to help prevent cancer, cardiovascular disease, control diabetes, and they assist in weight loss.

Artichokes are easier to make than you think. Try the following recipe and see for yourself.
