This recipe was inspired from the many lemons that I have juiced with my awesome citrus juicer. I typically buy a bunch of lemons and juice them once a week so that I always have lemon juice whenever I need it. My favorite thing to do after extracting the juice is to fill up my stainless steel ice cube tray and freeze it to make lemon ice cubes. Once the cubes are frozen, I pop them out, place them in a zip lock bag and voila, lemon ice cubes whenever I need them. I can pop one in my water in the morning which is great for cleaning the liver first thing. I can add them to my green juice for a little bit of zing. And let’s not forget, lemons are also great for salad dressings.
I am always so amazed at how wonderful the juicer extracts juice from lemons. The lemon shells look so perfectly clean inside. This time I wasn’t ready to throw the shells into the compost.
