Ingredients:
  • 1 Romaine lettuce head or preferred greens, chopped
  • 1 15 oz can of garbanzo beans or soak your own
  • 3 stalks celery, diced
  • 1 medium tomato, diced
  • 3 tablespoons fresh parsley, minced
  • 2½ tablespoons fresh mint, minced (use less, about half, if using dried mint)
  • 4–5 tablespoons olives, diced
  • 3 scallions, finely minced
  • 3 cloves garlic, crushed
  • 3 tablespoons fresh squeezed lemon juice
  • 2–3 tablespoons olive oil
  • Pinch of Himalayan crystal salt
  • Pepper to taste
  • ¼ to ½ cup vegan feta
Directions:Set aside base greens.In a separate mixing bowl, add and mix all the other ingredients.Add base greens to individual bowls and heap with garbanzo salad mixture. Top with extra chunks of vegan feta.
