Ingredients:- 1 Romaine lettuce head or preferred greens, chopped
- 1 15 oz can of garbanzo beans or soak your own
- 3 stalks celery, diced
- 1 medium tomato, diced
- 3 tablespoons fresh parsley, minced
- 2½ tablespoons fresh mint, minced (use less, about half, if using dried mint)
- 4–5 tablespoons olives, diced
- 3 scallions, finely minced
- 3 cloves garlic, crushed
- 3 tablespoons fresh squeezed lemon juice
- 2–3 tablespoons olive oil
- Pinch of Himalayan crystal salt
- Pepper to taste
- ¼ to ½ cup vegan feta
