Here’s your chance to enjoy a nutrient dense, digestion healing applesauce you don’t have to cook! I’ve included lots of variations and superfood additions to meet a variety of tastes, but you can also enjoy this plain with just the lemon juice and ginger for a delicious treat. It’s really fast to make and filled with healing enzymes, unlike the cooked versions of applesauce. The Sunwarrior protein, chia gel, and variations bee pollen and goji berries give it an extra plant protein boost.
Gracious Living Raw Coconut Applesauce and Chia Gel
Ingredients:
- 3 cored apples, cut in chunks
- Handful organic coconut
- Chunk of ginger
- 1 cup water
- Juice of 1 to 2 lemons
- 1 teaspoon pure vanilla
- 1 teaspoon cinnamon
- 1 serving Warrior Blend vanilla protein powder
- 2 tablespoons chia gel
- Sprinkle cinnamon
- Sprinkle nutmeg
- Sprinkle organic dried shredded coconut
Directions:
Place the apple chunks, coconut, and ginger in a high-powered blender. Add the water a little at a time and puree until smooth, adding a tad more water if needed. Mix in the lemon juice, vanilla, cinnamon, protein powder, and chia gel. Garnish with ground Ceylon cinnamon, nutmeg, shredded coconut, and/or seeds of choice.
Chia Gel:
Create chia gel by adding a ratio of approximately 1:3 seeds to water and let it sit in a bowl or mason jar for minimum of 15 minutes (overnight is best). The seeds will expand into a gel. Make sure to stir it around or shake the jar up to make sure there are no clumps and it has an even gel consistency.
Variations to the applesauce:
- Add raisins to sweeten
- Add goji berries to sweeten (soak goji berries for 10 minutes in water before adding to hydrate them and make them easier to digest)
- Add 1/2 teaspoon bee pollen
- Drizzle maple syrup on top
- Use unsweetened, sulphit-free coconut milk instead of water
- Top with grated apple
- Top with hemp seeds
