Quinoa with Chickpeas and Spinach

Eat flavor sprinkled with fabulous when you make this quinoa with chickpeas and spinach for dinner!

Using quinoa as the base of a salad or side dish is so versatile. It is truly a blank slate for any flavors, colors, and textures to layer in. Whether hot or cold, you can truly upgrade any quinoa dish. Also in case you didn’t know, quinoa is not only gluten free, but it is high in fiber and protein. So make it a consistent part of your meals – you won’t regret it!


Quinoa with Chickpeas and Spinach

  • 1 cup water
  • 3/4 cup fresh-squeezed orange juice
  • 1/2 teaspoon sea salt
  • Zest from 1 organic orange, approximately 1/2 tablespoon
  • 1 cup quinoa, rinsed and drained
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1/2 cup organic raisins
  • 1 cup cooked chickpeas or organic canned chickpeas
  • 1–2 cups spinach leaves, trimmed, washed, drained, and dried
  • Salt to taste
  • 1/2 teaspoon of cinnamon
  • 1/4 cup toasted pine nuts or almonds
  • 1 orange, cut into wedges


1) Combine the water and orange juice in a saucepan and bring to a boil. Add the salt, orange zest, and quinoa and return to boil.

2) Reduce the heat, cover, and simmer for twelve minutes, or until all the liquids are absorbed.

3) Remove the quinoa from the heat, keep it covered, and let sit for three minutes.

4) While the quinoa is cooking, heat the oil in a large skillet that has a tight-fitting lid. Add the onions and sauté over medium heat for about five minutes, until they have softened and begun to brown. Add the garlic and sauté until golden.

5) Add the raisins, chickpeas, and spinach. Cover and cook over medium heat for three minutes, or just until the spinach ha wilted. Adjust the heat if necessary.

6) Drain any excess water and season to taste with salt.

7) To serve, fold the vegetables into the quinoa. Stir in the cinnamon. Squeeze some orange juice over the quinoa. Garish with toasted pine nuts and orange wedges.
