These Pumpkin Oatmeal Breakfast Bites are the latest addition to my recipe collection. They’re delicious with a cup of coffee or tea, and they give you all the festive fall feels with each bite you take. Pumpkin is not just a trendy food for the season, but it’s also one of the healthiest. It’s loaded with potassium, fiber, and vitamin C and is said to be a “heart healthy” food. Pumpkin has tons of antioxidants and is one of the best things to consume for beta-carotene, which is said to help reduce the risk of developing certain types of cancer, delay the aging and body degeneration process, and protect against asthma and heart disease. The bottom line? Incorporate lots of pumpkin, like these oatmeal bites, into your diet throughout the fall and winter! This recipe is super easy to make and is a great swap for heavy breads and sugar-filled muffins during your breakfasts.


Pumpkin Oatmeal Breakfast Bites

  • 1 tablespoon flaxseed meal
  • 3 tablespoons water
  • ¼ cup organic maple syrup
  • 1 tablespoon vanilla extract
  • 1 cup gluten-free rolled oats
  • ¾ cup pumpkin puree
  • 1 teaspoon apple cider vinegar
  • ¼ teaspoon baking soda
  • ¼ teaspoon pink Himalayan sea salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger



  1. Combine 1 tablespoon of flaxseed meal with 3 tablespoons of water & stir to create a smooth mixture.
  2. Place in refrigerator for 30 minutes so that the mixture slightly solidifies (this will be what substitutes eggs to make the bites vegan).
  3. After the flaxseed mixture is ready, preheat the oven to 350 degrees F.
  4. Line a muffin tin with 6 paper liners.
  5. Combine all ingredients into a large bowl and mix together until a unified batter is created.
  6. Split the batter between the paper liners evenly.
  7. Bake for 22–25 minutes (the centers should be firm and not runny).
  8. Allow bites to cool for 25 minutes before eating and store the remainder in the refrigerator.
