Protein Power Cacao Crunch Cookies

For the love of cookies! Because we all love cookies! Especially the cookies that come packed with the health of protein and superfoods and come guilt-free for the win!

Who doesn’t love a home-baked treat that is both additively delicious as well as jam packed with nutrient power? Yes, even cookies can be nutritious. It’s all in what you use for ingredients. Ever so chocolate-y (made with great quality raw cacao powder), studded with crunch, and rich in so many good things: protein, fiber, quality carbs, and healthy fats makes this treat a home-run!


Protein Power Cacao Crunch Cookies

  • 1 cup organic oatmeal or quinoa flakes (gluten-free if needed)
  • ½ cup cacao powder, sifted
  • 1/3 cup Sunwarrior Warrior Blend protein, chocolate, vanilla, or mocha
  • ½ cup organic shredded coconut
  • 2 large really ripe bananas, mashed approximately 2 cups
  • ½ cup organic coconut or apple butter
  • 4 heaping tablespoons Sunbutter, creamy or crunchy, add a little more if needed
  • 2 tablespoons extra virgin coconut oil
  • 1 heaping tablespoon ground flax stirred into 3 tablespoons coconut water
  • 1/3 cup organic currants and ¼ cup cacao nibs
  • 1 teaspoon vanilla extract or vanilla powder and a pinch sea salt


  1. Pre-heat the oven to 350F and cover a baking sheet with parchment paper.
  2. Combine all ingredients in a bowl, mixing well to create a sticky dough that holds together well. Adjust ingredient amounts if needed.
  3. Using a two-inch ice cream scoop drop dough onto your prepared sheet leaving 2 inches between each cookie, flatten into patties and bake approx. 20 minutes.
  4. Let cool completely on a rack then store in a covered container or freeze up to 1 month.

Teri’s Tips:

  1. If you intend to use these as a pre-workout fuel source, consider adding the espresso powder or matcha powder for added energy
  2. If your bananas aren’t really ripe, then consider adding a few tablespoon date, prune or more apple or coconut butter to taste. Some like it sweet! J
  3. Makes approximately 10–12 large ice cream scoop sized cookies
