Mushroom and Vegetable Medley

Raw or cooked, this recipe is sure to be a hit. This mushroom vegetable medley goes well on pasta, crostini, or it can be eaten as a simple side dish.

Crimini mushrooms offer incredible immune support, protection against cardiovascular disease, and are high in selenium, zinc, and B vitamins.

On the list of super nutrition is the jalapeno pepper–packed with a rich source of antioxidants such as vitamin A, C, and K. The heat from these peppers can also help keep our metabolism revving, thus making the body burn more calories.

Mushroom and Vegetable Medley

Ingredients:

  • 2 cups crimini mushrooms (sliced)
  • 1 red pepper
  • 1 yellow pepper
  • 10 jalapenos
  • 1 sweet onion
  • 3 garlic cloves, minced
  • 1 cup olive oil
  • 1 cup fresh basil, chopped
  • Salt (to taste)
  • Pepper (to taste)
  • Raw option extra ingredients:
  • ¼ cup of Coconut Secret Soy-Free Seasoning sauce
  • 1/3 cup of coconut vinegar

Cooked Option Directions:marinating_mushrooms_picSlice the crimini mushrooms, and chop the peppers, onion, and basil, and set aside.

  1. Deseed the jalapenos and chop them very finely.
  2. Mince the garlic.
  3. In a pot add all the chopped and minced ingredients. Add the olive oil, salt and pepper.
  4. Simmer till the mushrooms and vegetables soften. The softness can vary depending on personal preference. Some prefer their vegetables with a little more crunch and others prefer them softer. This is entirely up to you. You can experiment with this recipe as you wish and see which option you prefer.
  5. Once simmered to your preference, add the mushroom vegetable medley to either whole-grain or gluten free pasta or on top of a crostini or simply have it as a side vegetable dish.

Raw Option Directions:

  1. Slice the crimini mushrooms and chop the peppers, onion and basil and set aside.
  2. Deseed the jalapenos and chop them very finely.
  3. Mince the garlic.
  4. In a bowl add all the chopped and minced ingredients. Add the olive oil, vinegar and soy-free seasoning sauce, salt and pepper.
  5. Let this marinate overnight or for at least 12 hours.
  6. Once marinated to your perfection, add the mushroom and vegetable medley to zucchini, kelp noodles or miracle noodles.
