Lemon Tomato Tapenade




Put some zing in your coming summer months with this lemon tomato tapenade! Your taste buds and overall health will thank you.

Sundried tomatoes are a rich red color, deeply flavored, and relatively salty. They are loaded with nutrients including lycopene, which protects against cancer. This delicious recipe can be enjoyed as a dip, spread on raw pizza or sprouted wraps, tossed with kelp or zucchini noodles.

INGREDIENTS

  • 1 cup sun dried tomatoes, soaked for 1–2 hours
  • ½ cup olive oil
  • ½ – 1 teaspoon salt
  • 2 cloves garlic, crushed
  • 1 ½ teaspoons grated lemon rind
  • 1 ½ tablespoons fresh lemon juice
  • 1 teaspoon chopped fresh thyme or 3/4 teaspoon dried thyme

DIRECTIONS

1. Soak sun-dried tomatoes in warm water for 1 hour.

2. Drain and chop sun-dried tomatoes coarsely.

3. Process all ingredients in a food processor or blender until finely minced.

4. Spread on flatbread, sprouted bread, or crackers.
