You can make them with your family, with a bunch of friends, your kids, for Sunday breakfast, for brunch, or for a solo retreat. Okay, let’s go.
Kasia Sitarz' Famous Protein Pancakes Recipe
Ingredients:
- 1 cup egg whites
- 1 egg
- 1 tablespoon coconut oil
- 1 banana
- 1 teaspoon vanilla extract
- 2 to 3 teaspoons ground cinnamon, or to preference
- ¼ to ½ teaspoon baking powder
- 1 scoop Warrior Blend or Classic Plus chocolate protein
- 1 to 2 cups rolled or steel cut oats, according to your desired consistency
- 1 tablespoon coconut oil
Toppings:
- Vegan chocolate chips
- Unsweetened shredded coconut
- Diced apples
- Blueberries
Directions:
Start with egg whites in your blender and add a whole egg, coconut oil, and a banana. Round out the flavors with vanilla extract, cinnamon, baking powder, and don’t forget the extra dose of protein from Sunwarrior (we’re going for chocolate Warrior Blend, but vanilla Classic Plus is tempting too).
Blend it up, but you aren’t done yet.
We’re going to put some oats in there for extra flavor, texture, and healthy fiber/complex carbs.
Let the oats soak for a minute before you heat up your pan, griddle, or skillet.
Grease that up with some more coconut oil and spoon in the mixture.
While they start cooking, now is the time to add extra goodies. We’re talking vegan chocolate chips, apple chunks, blueberries, dice apricot, strawberries, and anything else you might want to try out in there. Make each one unique and personalized if you like.
Flip them when they are golden brown and ready, about 2 to 3 minutes. That’s about it.
Go ahead and drizzle on your favorite sauce. We’re recommending coconut nectar, maple syrup, berry syrups, coconut caramel, or even just some fresh fruits or fruit preserves. Yummy! Enjoy these healthier alternatives to a classic oatmeal pancake and try them on for size after a workout.
