To me, fresh homemade bread is the most comforting food in the world. However making it 100% whole wheat is so difficult. Whole-wheat flour is full of many nutrients like fiber and protein that are good for your diet, but why is it so hard to make bread that isn’t as heavy as a rock? I’ve searched for years trying to find a recipe that doesn’t produce a heavy loaf. I’ve tried countless recipes and always ending up with a rock of a loaf that no one wants to eat. So I just resolved myself to just using mostly whole-wheat and only a little white flour so the loaves aren’t so heavy and are edible. Finally, after years of searching, I have found a delicious loaf!
When making bread, one of the most important rules to know is adding too much flour will result in a heavy loaf. It is important to add just enough flour so the dough is tacky but still soft. Also adding the wheat gluten helps create a lighter loaf as well.
One thing that makes this recipe a winner, I think, is that you weigh the flour. You don’t just add cup after cup. Most of the time you will not need all the flour listed. When I made it the first time, I used a little more than half of the flour listed, but your results will vary. It may take a few times; breads take practice, after all. But hopefully, it’ll turn out just delicious for you as it did for me!
