High Protein Trail Mix Cookies

INGREDIENTS

Dry Ingredients

Wet Ingredients

  • 2 flax eggs (2 tablespoons ground flax seeds + 6 tablespoons water) Let flax mixture sit about 15 min. to thicken
  • ¼ cup applesauce OR ¼ cup coconut oil
  • 1/2 cup almond butter
  • 1/4 cup sweetener (we used coconut sugar)
  • 1 teaspoon vanilla

Add-In

  • ½ cup of your favorite trail mix

DIRECTIONS

  1. Preheat oven to 350°
  2. Whisk all wet ingredients together
  3. Add whisked, wet ingredients to dry ingredients and stir until well combined
  4. Fold in your favorite trail mix
  5. Drop spoonful of dough onto greased cookie sheet
  6. Bake 10–12 minutes
