High Protein Trail Mix Cookies
Ingredients
- 1 cup rolled oats
- ¼ cup oat flour
- ¼ cup Sunwarrior Warrior Blend vanilla
- ½ cup unsweetened coconut flakes
- 1 teaspoon baking powder
- ½ Sunwarrior Sea Salt
- 1 teaspoon cinnamon
- 2 chia eggs (2 tablespoons Sunwarrior Chia Seeds + 5 tablespoons water. Let chia mixture sit about 15 min. to thicken)
- ¼ cup applesauce OR ¼ cup coconut oil
- ½ cup almond butter
- ¼ cup sweetener (we used coconut sugar)
- 1 teaspoon vanilla
- Add In: ½ cup of your favorite trail mix
Directions
- Preheat over to 350* Whisk all wet ingredients together
- Add whisked, wet ingredients to dry ingredients and stir until well combined.
- Fold in your favorite trail mix.
- Drop spoonful of dough onto greased cookie sheet.
- Bake 10-12 minutes.
