High Protein Trail Mix Cookies

Prep Time
INGREDIENTS
Dry Ingredients
- 1 cup rolled oats
- ¼ cup oat flour
- ¼ cup Sunwarrior Warrior Blend vanilla protein
- ½ cup unsweetened coconut flakes
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon cinnamon
Wet Ingredients
- 2 flax eggs (2 tablespoons ground flax seeds + 6 tablespoons water) Let flax mixture sit about 15 min. to thicken
- ¼ cup applesauce OR ¼ cup coconut oil
- 1/2 cup almond butter
- 1/4 cup sweetener (we used coconut sugar)
- 1 teaspoon vanilla
Add-In
- ½ cup of your favorite trail mix
DIRECTIONS
- Preheat oven to 350°
- Whisk all wet ingredients together
- Add whisked, wet ingredients to dry ingredients and stir until well combined
- Fold in your favorite trail mix
- Drop spoonful of dough onto greased cookie sheet
- Bake 10–12 minutes
