Hazelnut & Chocolate Cupcakes

These cupcakes taste so good you won’t believe they are healthy! And yet they are gluten-free, sugar-free, packed with protein, and just so delicious! There is a perfect balance of rich dark chocolate flavor and sweet and creamy icing. What’s more, they’re also super easy to make and don’t require too much prep time. There is a warning, though; they’re highly addictive! You’re likely to eat them all at once! Eat responsibly.

For the Hazelnut Cream:

For the Cupcakes:

  • ½ cup gluten free oat flour
  • ½ cup cacao powder
  • 2 scoops Sunwarrior Classic Chocolate Protein
  • 1 tablespoon baking powder
  • 6 tablespoons maple syrup
  • 1 ½ cups plant-based milk
  • A pinch of salt
  • Cacao nibs or chocolate chips to sprinkle on top


Start with making the hazelnut cream. Preheat the oven to 180 degrees Celsius. Put the nuts on a baking tray and roast for 8–10 min or until golden-brown. Take out of the oven and let cool. Keep the oven on; you’ll need it to bake the cupcakes.

Put the nuts in a food processor and blend until sticky mass forms, just before it starts turning into nut butter. This will take a good few minutes. Add soaked dates, protein powder, salt and milk and blend until smooth.

To make the dough, simply put all the ingredients in a food processor and blend until smooth. Pour one tablespoon of the dough in every paper cupcake case, then put one teaspoon of the hazelnut cream and top with the dough. In this way, you’ll have a lovely filling inside the cupcakes. Put them in the oven and bake for around 20 minutes.

When cool, use a piping bag to put the icing on top and sprinkle with cacao nibs/chocolate chips. If you have some hazelnut cream left, use it as a spread for a sandwich or add to your oatmeal in the morning!
