Halloween Bats! Chocolate Protein Muffins

The best thing about the Halloween season is the chocolate. Okay and maybe ghosts. And the movie Hocus Pocus. But definitely chocolate, so get batty with these chocolate protein muffins!
Getting your chocolate on in a healthier way sometimes feels incredibly difficult, but it can be done, and it can be done fun! These muffins are definitely an indulgence, but it is a holiday! So, grab the kids, put on your favorite Halloween music, and get baking!

Halloween Bats! Chocolate Protein Muffins

Prep Time
INGREDIENTS
Muffin
- ¾ cup oat flour
- ¾ cup rice flour
- 1 cup coconut sugar
- 1 cup dark chocolate chips (or cacao nibs) (set aside ¼ cup)
- ½ cup unsweetened cocoa powder
- 2 teaspoons baking soda
- ½ teaspoon cinnamon
- 1 scoop Sunwarrior Warrior Blend chocolate protein
- 1 flax egg
- 1 cup coconut cream
- ½ cup coconut milk
- 1 teaspoon vanilla extract
- ½ cup melted coconut oil
Frosting
- Coconut cream skimmed off two cans coconut milk that have been stored in fridge overnight
- 3 tablespoons coconut nectar
- 5 tablespoons cocoa powder
Bats
Sugar-free, vegan chocolate cookies (if you’d like to make your own, you need to check this recipe out!) eyes can be made using a bit of the coconut cream not mixed with cocoa powder and a bit of the cookie placed in the center. Or you can just use edible googly eyes.
DIRECTIONS
Muffin
Line cupcake pan with cupcake liners (use the fun Halloween themed liners for a little extra spooky in your holiday)
Preheat oven to 400 degrees
Mix together all dry ingredients (flours, coconut sugar, ¾ dark cup chocolate chips, cocoa powder, cinnamon, Sunwarrior Warrior Blend chocolate protein, and baking soda) in a large mixing bowl. Set aside.
In a separate mixing bowl, mix together all wet ingredients (flax egg, coconut cream, coconut milk, coconut oil, and vanilla); whisk together until mixture is smooth.
Pour wet ingredients into the larger bowl of dry ingredients and stir until batter is blended.
Spoon batter into muffin tin (about ¾ full).
Sprinkle with remaining chips and put into over
Bake for 18-22 minutes. (use a toothpick to test if they're done)
Frosting
Stir cocoa powder and coconut nectar into the coconut cream
Bats
Frost muffins with chocolate frosting. Break chocolate cookies in half so the edges are a little ragged and place in frosting horizontally so “wing tips” are close to each other. Place two circles of white frosting for eyes and place two little cookie bits in the center of the whites. Or buy edible googly eyes.
