Green Lentil Dal with Rice

Ingredients:

  • 1 cup brown rice
  • 3 tablespoons olive oil
  • 6 teaspoons cumin seeds
  • 2 teaspoons red pepper flakes
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 teaspoons salt
  • 2 cups lentils
  • 4 cups not-chicken broth
  • 4 cups water
  • 2 teaspoons ground turmeric

Directions:

Prepare the brown rice according to the directions on the package. Once it’s cooked, set it aside. Or prepare the rest of the recipe near the end of its cooking time.

Heat your oil in large saucepan over medium heat. Stir in the cumin and red pepper flakes and sauté for 1 minute. Add the onion, garlic, and salt and sauté for 1 minute more.

Add the lentils, not-chicken bouillon broth, water, and turmeric. Mix it well and cover, reduce the heat to medium-low, and let it simmer for about 40 minutes, stirring occasionally.

Once it’s finished, you can add the prepared brown rice to the saucepan and mix it up well, or you can plate up the rice and serve the lentil dal on top. Either way, you and your guests will be sure to enjoy the flavor in this dish!
