Grain Free Blueberry & Cranberry Muffins: giving you the depth and yummy flavor your taste buds and health deserve!

Using Cassava and coconut flour gives these muffins a bit more depth in flavor and loads them with fiber and protein. Also, adding applesauce gives the muffins natural sweetness and makes it moist, tender and delicious! They are perfect during the fall months. You can store them in your freezer for up to three months and warm them up for breakfast and add some almond or pumpkin seed butter for a little extra protein and fat.

INGREDIENTS

  • 1 cup organic cassava flour
  • ½ cup coconut flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon cinnamon
  • ½ teaspoon sea salt
  • ½ cup almond flour
  • ½ cup coconut milk
  • ¼ cup coconut oil, melted
  • ¼ cup maple syrup
  • 1⁄3 cup applesauce
  • ½ cup cranberries
  • ½ cup blueberries

DIRECTIONS

1. Preheat oven to 350F. Measure and combine dry ingredients; flour, baking powder, baking soda, cinnamon, and sea salt

2. Mix wet ingredients, oil, maple syrup, applesauce, berries, and coconut milk

3. Pour wet ingredients into the dry ingredients and mix well, making sure there are no lumps. Stir in raisins

4. Spread mixture evenly among 12 muffin cups

5. Bake for 20 minutes

6. Remove from oven, let sit for a few minutes and remove and cool muffins on cooling rack or tray
