Gracious Living Superfood Raw Cauliflower Vegan Pizza Bites

Vegans don’t have to give up pizza. They just have the chance of doing pizza better. Eating healthy tastes great with this raw cauliflower vegan pizza!rn

A fun, layered vegan pizza bite snack or meal that uses fresh foods, veggies, and superfoods AND no cheese or eggs. You can also use parts of this recipe for other recipes. I.e. the cauliflower crust can be used as crackers and the mock cheese spread can be used as a dip. Try topping these nutrient dense bites with other veggies than the ones listed below. It’s your choice! Have fun with it.

Gracious Living Superfood Raw Cauliflower Vegan Pizza Bites

Ingredients:

Egg Mixture:
  • 2 tablespoons chia seeds with 1 cup water
  • 2 tablespoon hemp powder
Crust:
  • 2 cups raw cauliflower (aprox. 1 small cauliflower)
  • cauliflower pizza bites_3_pic1/2 cup pine nuts
  • 2 cloves raw garlic
  • 8 fresh basil leaves
  • 1 cup "egg mixture" mixture
  • 1/2 cup soaked sun dried tomatoes
  • 1/3 cup nutritional yeast
  • 1 teaspoon mesquite powder (What is mesquite? See link below.)
  • 1 teaspoon oregano
  • 1/2 teaspoon kelp granules
  • 1/2-1 teaspoon rock salt to taste (try it at end and make sure it tastes to your liking)
Sundried Tomato Cheese Sprout Spread:
  • 1 cup pine nuts or cashews
  • 1/3 cup nutritional yeast
  • 1 teaspoon lucuma (I like mine from Navitas Naturals)
  • 1 clove garlic
  • 1 tablespoon light, organic miso
  • Juice of 1 fresh lemon
  • 1/3 cup fresh red onion
  • 1/2 cup soaked sundried tomatoes
  • Sea salt to taste
  • *1/2 cup alfalfa sprouts ( to be added at end)

  • 1 cup tomatoes
  • 1/2 cup soaked goji berries (I like mine from Navitas Naturals).
  • 1 clove garlic
  • 1 teaspoon organic, light miso paste
  • sea salt to taste

Directions:

First make the "Egg mixture":
  1. Mix chia with water
  2. Let sit for 15+ min and stir occasionally so it doesn't get clumpy.
  3. After 15 min, add 2 tablespoon hemp powder.
  4. Mix or blend well. Let sit for a few more minutes to settle into a gooey mixture that will bind your cauliflower crust.
  5. Set aside and get ready to make crust:
Crust:
  1. Blend all ingredients in a food processor then place in mixing bowl
  2. Add “egg mixture” and thoroughly mix together
  3. Place on tray on parchment paper into pizza shell sizes of your choice. (I like mine as big as my hand). Bake in oven at 350 F for about an hour until slightly crispy and not too brown.
  4. To make it fully raw you need to dehydrate in dehydrator for about 5–7 hours at 145 F.
Sundried Tomato Cheese Sprout Spread:
  1. Blend ingredients for the spread until creamy in food processor. Try it. Add more sea salt if necessary. Then add 1/2 cup alfalfa sprouts to mixture. Blend a little more but not too long as you don't want to over process the sprouts.
Raw Tomato Sauce:
  1. Blend all sauce ingredients in food processor until it is the desired consistency

  1. Place a layer of cheese on cauliflower crust that has already been baked.
  2. Then add a layer of tomato sauce.
  3. Top with leafy greens and thinly sliced green onions.
  4. Top greens with thin tomato slice.
  5. Top tomato with olive slices.
