Coconut milk blended with sweet potato makes this soup divinely creamy. Ginger and garlic help combat inflammation while boosting the immune system, and the fresh apple gives it a nice sweetness. The spices also help decrease inflammation while helping to improve digestion. So get started on this soup that’s super yummy, super easy, and super good for you!
Gracious Living Creamy Spicy Sweet Potato (Vegan) Soup
- 1 cooked, peeled sweet potato (steaming is faster than baking)
- 1/2 red apple, seeded and cubed
- 1 can sulfite-free coconut milk
- 1 cup pure water
- 1 to 2 cloves garlic
- 1 piece fresh ginger
- 1/2 teaspoon cumin
- Sprinkle cayenne pepper
- Sprinkle turmeric
- Sea salt to desired taste
Blend all ingredients together until it’s super creamy. You can serve it at room temperature or heat it up slightly by blending longer or heating on the stove..
Top with (sprouted) sunflower seeds, fresh sprouts, or shredded unsweetened coconut.
For added protein: Blend with 2 teaspoons natural unsweetened Sunwarrior protein powder or 3 tablespoons hemp seeds.
