Flourless & Vegan Pumpkin Spice Muffins

Pumpkin is the whole reason for the fall season. Celebrate crunchy leaves and crisp air with these vegan, flourless pumpkin spice muffins!

The taste of fall is something that never gets old. In my opinion, the flavors of the season don’t last long enough. One of my favorite morning treats to enjoy while sipping my green tea is a delicious muffin. The problem is, what’s available in most stores doesn’t meet my health requirements. I avoid dairy, gluten, and excess sugar which are three ingredients people often make muffins with. I discovered a recipe for flourless, vegan pumpkin spice muffins that will leave you wondering why those three ingredients would ever be needed again to satisfy your next muffin craving. The centers are moist, the base has just the right amount of crisp, and the pumpkin flavor mixed with the chocolate melts in your mouth. If you are planning a celebration and want to make these really festive, use the muffins as your cake and frost them however you please to make healthy cupcakes. This is a recipe I plan on making all throughout the season until Thanksgiving, and it is a great way to enjoy this tasty treat while feeling guilt-free!

pumpkin muffins chia egg vegan recipe

Ingredients:

  • 1/2 cup of organic pumpkin
  • 1 cup of creamy almond butter
  • chia eggs (or regular eggs if you wanted a non-vegan substitute)
  • 1/3 cup of organic maple syrup
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of pink Himalayan sea salt
  • 1 teaspoon of organic vanilla extract
  • 1 tablespoon of pumpkin spice
  • 1/3 cup of Enjoy Life 69% cacao dark chocolate chips
  • (optional) 1 dash of cinnamon

Directions:

  1. Preheat your oven to 350 degrees.
  2. Spray a 12-serving muffin pan with coconut oil or line with festive muffin tins.
  3. Combine all ingredients in a large bowl (except the chocolate chips) and mix until a smooth batter forms.
  4. Gently mix in the chocolate chips.
  5. Scoop batter evenly into the 12 muffin slots.
  6. Bake for 15-20 minutes (depending on the oven) and test a muffin with fork to make sure the center is cooked through (note - sweet spot seems to be around 17-18 minutes)
  7. Remove from oven and let cool for 15 minutes before enjoying!
