Easter Berry Pancakes

Who doesn’t love waking up to the smell of pancakes in the morning? The sweet smell of nutmeg and cinnamon will flourish through your kitchen. Easter brunch or suppers are a mix of sweet and savory. Easter morning is a special time when family and friends get together, so why not celebrate with protein berry pancakes. They are gluten free, vegan, and full of nutrients. Your guests will be begging for seconds.

This recipe can hold so many incredible flavors. A great alternative would be to add 1 zest of a lemon with 1/3 cup lemon juice. Add 1 tablespoon poppy seeds and omit the nutmeg. Now you have delicious lemon poppy seed protein pancakes. The lemon will burst in your mouth with flavor as the poppy seeds crunch. You could even drizzle some delicious coconut butter on top. That is what you call a masterpiece!

Easter would not be complete without having carrot cake, so why not create carrot cake pancakes? They are delicious and only call for the addition of carrots and coconut. Make the same recipe as listed below, simply add 1/2 cup shredded carrots and 1/2 cup unsweetened coconut. This is the best way to have dessert as breakfast. The best part is that these pancakes are light and nutritious without adding any refined sugars to the mixture. Add a dollop of coconut whip cream to finish the dish or if you want a touch of sweetness, you can add a drizzle of maple syrup.

Brown rice flour is an awesome alternative to white rice flour. It has more fiber which keeps you fuller longer and contains vitamins and nutrients our body needs. In this recipe we will use a “flax egg” which is the replacement for one egg. One flax egg consists of 1 tablespoon of flax meal combined with 3 tablespoons of water. Let it sit for 5 minutes to thicken and voila, we have the perfect vegan binding agent for any recipe. The best part about this recipe is that it only takes around 10 minutes from start to finish!
