Courgette Salad

For a salad that is fun and fresh and full of flavor, this courgette salad is your new springtime favorite meal for the whole family!

Spring and summer are the best time for produce in areas where we have four seasons. Here in Canada, we have a spring, summer, fall, and winter so we can look forward to new vegetables every few months. With spring arriving, the possibilities are endless. This recipe would be perfect for the little ones. These courgettes and carrots resemble multicolored French fries! What better way to get the kids involved in eating fresh foods than this salad.

Courgettes, also known as zucchini, have a whole array of health benefits for the body and skin. They are low in calories and contain mostly water and fiber, which will keep you feeling satiated longer and leaving your body feeling refreshed. If you’ve ever had one of those days that you go a little crazy on the carbohydrates, zucchinis are always that vegetable that will come to the rescue. These beautiful vegetables are low in sodium and carbohydrates. Making a bountiful salad such as this will ensure you are getting a huge amount of water for the day. Zucchinis are incredible for your skin which will leave you looking radiant and fresh. How much better does this salad get?

To add a little bite to this salad, add organic olives. You can omit the olives if you are not an olive person. Add nuts or seeds instead.


Courgette Salad

  • 2 yellow zucchini, julienned
  • 2 green zucchini, julienned
  • 2 large carrots, julienned
  • 1 large red pepper, julienned


  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon orange juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper


  1. Slice all vegetables and place in a large bowl
  2. Whisk all dressing ingredients together. Pour over salad and set aside for 20 minutes to set in the fridge or serve immediately
