Blueberry Muffins with Protein, Oat & Greek Yogurt

  • 1 cup + 1 tablespoon almond or coconut flour divided
  • 1 cup rolled oats
  • 1–2 scoops of Sunwarrior Warrior Blend vanilla protein
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 flax eggs
  • 1 cup plain vegan Greek yogurt
  • 1/3 cup 100% pure maple syrup
  • ¼ cup nut milk
  • 2 teaspoons vanilla extract
  • 1 cup fresh or frozen blueberries or fruit of choice


  1. Preheat oven to 350 degrees F
  2. Spray a muffin pan with coconut oil
  3. Combine 1 cup almond flour, oats, baking powder, and salt in a bowl.
  4. In a medium bowl, combine flax eggs, yogurt, maple syrup, nut milk, and vanilla extract until well-combined
  5. Pour and stir the wet ingredients into the dry ingredients until combined.
  6. Add the blueberries in the flour that is remaining
  7. Fold them carefully into the batter
  8. Fill the muffin cups to the top with batter
  9. Bake muffin batter for about 18–20 minutes (the tops of the muffins should be golden and firm)
  10. Let muffins cool completely
